I have been trying new ways of making chicken, last week I decided to try a recipe I had seen before but using only ingredients I had at home. Introducing my version of the garlic broiled chicken.

Ingredients
  • 1/2 cup butter
  • 3 granulated garlic
  • 3 tablespoons soy sauce
  • 1/4 teaspoon black pepper
  • 1 tablespoon dried oregano
  •  4 chicken breasts
  • Dried oregano
 Directions
  • Preheat the oven broiler. Lightly grease a baking pan.
  • In a microwave safe bowl, mix the butter, garlic, soy sauce, pepper, and oregano. Cook 2 minutes on High in the microwave, or until butter is melted.
  • Arrange chicken on the baking pan, and coat with the butter mixture, reserving some of the mixture for basting.
  • Broil chicken 20 minutes in the preheated oven, until juices run clear, turning occasionally and basting with remaining butter mixture. Sprinkle with oregano to serve. 
We made some white rice and a quick salad and dinner was served. Caleb loved it, and so did, it was such an easy recipe!

I have been cooking a little bit more lately, trying new recipes for veggies and other different things. last week I came across a recipe for baked broccoli that was delicious and we paired it up with our Parmesan tomatoes, white rice and lemon salmon.  

Below the recipe for the broccoli, you will love it.

Baked Broccoli (Serves 4)
  • 1/4 cup olive oil
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano (optional)
  • 1/2 teaspoon dried thyme (optional)
  • 1 pinch salt
  • 1 pinch fresh ground black pepper
  • 1 pound broccoli florets
Preheat oven to 350F

In a bowl, mix together the olive oil, brown sugar, lemon juice, cayenne pepper, garlic powder, oregano, thyme, salt, and black pepper until thoroughly combined. Add the broccoli florets, and toss until evenly coated with the seasoning. Spread the broccoli florets out onto an baking sheet with a rim.

Bake in the preheated oven until the broccoli is just browned on the top, 10 to 15 minutes.

Our Friends Brandon & Mel came over earlier this week with their kids Hannah and Bishop and brought dinner for us. She made an amazing chicken soup and brough strawberry shortcake. My job was to make a salad and I just made veggies. I made the tomatoes my mother in law taught me about and then I made some  broccoli with an outstanding dressing and sesame seeds. I'll share the recipe below. 

Anyway aren't the kids beautiful? Brandon & Mel are outstanding parents, they are currently leading a Parenting Community Group at Church and I love how passionate they are about ministering to their kids and teaching about God. I am so excited to know that once Caleb and I have kids we'll have close friends we'll be able to talk to and ask for advice from. 

As we were hanging out Bishop went looking for adventure around the house and found our sombreros, he brought them all out and had everyone wear one, he looked like a white tourist in Colombia haha. 

We love the Miller family and we are so grateful for them and their friendship, they are expecting their 3rd baby and we are so excited to meet miss Miller baby. Hopefully we wont wait months before we get together again!  

Sesame Broccoli 
  • 2 tablespoons sesame seeds
  • 1 1/2 pounds fresh broccoli, cut into bite size pieces
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 teaspoons white sugar
Directions 
  1. Preheat oven to 375 degrees F (190 degrees C). Toast sesame seeds for 3 to 5 minutes, or until the seeds begin to turn golden brown. Set aside.
  2. Bring a large pot of water to a boil. Cook broccoli in boiling water for 3 to 5 minutes, or until desired tenderness. Drain, and transfer to a large bowl.
  3. In a small bowl, whisk together the vinegar, soy sauce, sesame oil, sugar, and sesame seeds. Pour over broccoli, and toss to coat.

We saw this recipe online and noticed we had almost all those ingredients at home so we had to try and make it. And here it is, our version of the Grilled Chicken with Lemon Basil Pasta. We changed a few things around but it was still delicious. Next time we make it we will probably grill the chicken out in the mini BBQ we have, even though the chicken was delicious it was a bit dry so we'll try truly grilling it. I'll add the recipe here just to have it recorded.
Grilled Chicken with Lemon Basil Pasta

Ingredients:
  • 4 whole Grilled Chicken Breasts, Sliced
  • 1 pound Penne Pasta, Cooked Until Al Dente
  • ½ sticks Butter
  • 3 whole Lemons, Juiced
  • ¾ cups Heavy Cream
  • ¼ cups Half-and-half
  • 1-½ cup Grated Parmesan Cheese (or Romano)
  • Salt And Freshly Ground Black Pepper, To Taste
  • 20 whole Basil Leaves, Chopped
Cook pasta, reserving 1 cup of hot pasta water when you drain. 
Set pasta aside in a colander.
In the same pot, melt butter over medium heat. 
Squeeze in the juice of 3 to 4 lemons. Whisk together. 
Pour in cream and half-and-heat. Whisk until hot. 
Dump in cheese and whisk until melted. 
Add salt and pepper. Check consistency, adding some of the hot pasta water to loosen the sauce if needed.
Pour pasta and sauce into a large serving bowl. 
Sprinkle remaining basil all over the top, then add sliced chicken breasts. 
Serve immediately!

Have you guys ever had a Roy Rogers? they are actually pretty phenomenal here is the recipe

Roy Rogers
  • 6oz of coke
  • 1/4 oz of grenadine
  • Cherry

Pour the ingredients into a glass with ice. Stir and garnish with the cherry

Simple right? Well K decided to make them for date night this week on the roof of our house. We brought towels and went up to get a tan and chat and have a mocktail. We spend a total of $5 on our date night, it was wonderful and we both got a little bit darker, perfect!
