My K and I went to Crest Cafe a few weeks ago on a Saturday night and when we saw the soup of the day was apple brie soup we ordered a cup without hesitation. Like everything else there the soup was outstanding.

K works most Saturdays so we haven't gone in a while which prompted me to find the recipe and make the soup, no big deal right? wrong!
I googled the amazing soup and before you knew it I was grocery shopping, brie, apples, celery, onions, cumin, ginger, flour... I was going to make this soup happen and it was going to be awesome, a milestone in my cooking career!

So I started following the instructions, everything was going great, saute, mix, add flour, heat, whisk, puree, I was a Colombian Julia Child people, my cooking skills were going to revolutionize the culinary world and impress millions.

The last step was to throw the brie in the soup and let it melt, I did my job, and started mixing the brie but after a few minutes nothing was melting, it just looked odd and definitely not appetizing. I waited longer, waited a bit more and then waited for a few more minutes and the brie had not melted yet, so I started to feel like Jo again, Colombian Julia Child was slowly disappearing.

After a good 15 minutes I noticed the soup looked weird and smelled even weirder, so I turned off the heat and asked k to try it. Him being the lovely husband he is told me the soup was actually not that bad, but I see the disappointment and disgust in his face. So I tried the soup that made my mouth water at the sole thought of it and all the confidence in my cooking skills vanished as I realized I had burnt my creation, the soup sucked.

I'll try again, and I'll let you all know how the second shot at the apple brie soup goes. Wish me luck!

My dad sent me a sweet email yesterday with the most wonderful song. The song is in Spanish and it is just so beautiful. Jesus Adrian Romero is singing to his daughters and you can't help but cry every time you listen to it, I had to stop playing it.

LOVE YOU DADDY!

We had so much fun in Palm Springs with Maddie, Sophie Jo, their lovely parents and grandparents. What made it even more fun is the fact that the girls had a couple of friends with their mommies in town too, so we had a great time with baby Sophie (yeah we had two Sophie's) and baby Brooklyn playing dress up (even if some of the pictures say otherwise haha).

Aren't they adorable?

Aren't his shoes the coolest?

We try to look cute on Sundays for church, it's the perfect day to try new outfits and pull out the bright blue shoes. I had never worn that dress but I decided to try it out and it was fun, so I will b wearing it through the summer =D

My friend Erin came over on Thursday, she's doing a Daniel fast so we cooked whole wheat pasta, green beans, salad and potatoes. Wow when you read it it doesn't sound healthy, but it really was and we had a great time talking and laughing.

My friends have been teaching me different recipes, Erin taught me to make baked rosemary potatoes and I loved them. Thank you for teaching me, love you!

Happy Birthday Pool Mamma and Pool Poppa. They are the best, visiting them in Palm Springs is the most relaxing time, you get to swim, watch fun shows, laugh at the most random conversations and eat the best Jewish sandwiches in the world. We love you both and we are exciting to come visit this weekend and say Happy Birthday in person.

Ps. How cool is it that they have the same birthday?

Today we ran errands, watched the men who stare at goats, K went to class, I went to a jewelry party and then hung out with girlfriends and now we are home. K didn't want to be in pictures today so that's why his only picture is that one, crazy man!!

K and I went to Point Loma after a great morning with friends for lunch. We had been to this little bread place once before and for some odd reason K remembered it this morning and decided we had to go back. I am really glad he felt that way, I love their sandwiches, they are so fresh and good. We shared a turkey sandwich with sun dried tomatoes, avocado, lettuce and blue cheese and it was fantastic.

On a different note the weather forecast said it was going to rain in SD, and it did in the morning but by the time we went to lunch it was all dried up and sunny. I still had my awesome umbrella with me so the umbrella did it's debut in the blog!

Our gorgeous friend Courtney had her 22nd birthday today, she is just so cute and she has a little baby in her belly so celebrating was super exciting since she got to her her baby's heartbeat today. Her and her husband were so happy to have a healthy baby, can you think of a better birthday gift? Anyways, HAPPY BIRTHDAY Courtney!

San Diego was a bit gray today, but I love it, it reminds me of home and it allows for me to wear the clothes I would wear in Bogota. Husband and I went to church today, we were helping with the kids today, we do it once a month and I must be honest we had a great time this morning. Tomorrow is our day off together so we are excited for a date day and to hang out with friends. This week is going to be great, I know it!
